- 1 tablespoon olive oil
- 4 cups water
Instructions
- Cook ground turkey in a skillet over medium heat until browned. Drain excess fat.
- Boil sweet potatoes in water for 15 minutes or until tender. Mash lightly.
- Combine cooked turkey, mashed sweet potatoes, peas, carrots, and olive oil in a large pot. Add water and simmer for 10 minutes.
- Cool completely before serving. Store leftovers in airtight containers for up to 5 days.
